Tonic water is a complete flavor argument in one bottle: quinine for bitterness, sugar to answer it, citric acid to keep both honest, and carbonation to carry the whole thing. Coffee walks into that argument already fluent — it has its own bitterness, its own acids, its own sweetness. Done right, the quinine frames the coffee's fruit the way tonic frames gin's botanicals, and the espresso tonic earns its place as specialty coffee's favorite aperitif.

The carbonation is doing real sensory work. Bursting CO₂ bubbles physically launch aroma compounds up out of the glass and carry them to your nose, and carbonic acid adds a faint prickle that reads as freshness. The same shot tastes more aromatic sparkling than still.
