How immersion works

Every brewer on earth is one of two ideas. Percolation passes fresh water through a bed of coffee — V60, espresso, batch brewers. Immersion holds all the water and all the coffee together for the whole brew — the press, the cupping bowl, cold brew. Your press is pure immersion, and that purity is why it is the right first method.
Because the same water sits with the grounds, it gradually fills up with dissolved coffee — and the fuller it gets, the slower it extracts. The brew applies its own brakes. Percolation never does this: every pour brings hungry fresh water, which is exactly why cones reward technique and presses forgive it.

What immersion does brilliantly: body. The metal mesh lets through the oils and microscopic solids that paper filters hold back, so a press cup lands on the tongue heavier and rounder than any pour-over of the same beans.
Its honest weaknesses are two: sediment — fine grounds slip the mesh and gather at the bottom of the cup — and the fact that the brew never stops until you decant. Both are managed, not eliminated, and the next lessons handle each in turn.
Note
Paper filters trap most of coffee's oils, including cafestol — a compound that can nudge cholesterol for very heavy unfiltered-coffee drinkers. Mesh lets it through; that is part of the press's texture. At a few cups a day this is a curiosity, not a warning — but it is why 'filtered' and 'unfiltered' mean something to cardiologists as well as baristas.
