The science

Cezve coffee is decoction: the grounds are heated directly in the water and never filtered out. That demands the finest grind in coffee — a true powder, finer than espresso — because the particles must extract almost completely in a few minutes and then settle into a compact layer at the bottom of the cup rather than staying suspended as grit. Flour-fine coffee, cold water, and gentle heat go into the pot together; nothing is removed.

Extraction is rapid and nearly total, so control comes from heat management rather than grind or ratio. Warm the pot slowly over low heat. As it approaches the boil, a dense foam rises — the cezve's signature, a colloid of fine particles, oils, and CO₂. Take the pot off the heat just as the foam climbs, before a true boil: hard boiling destroys the foam, scorches the coffee, and drives the cup from rich to acrid. Traditional service pours slowly to preserve the foam, then gives the grounds a minute to settle.

Sugar and spice are brewing decisions, not condiments — they go in before heating so they dissolve and integrate. The classic ratio is strong, around 1:10, in small cups. Drink to the last third and stop; the bottom belongs to the grounds.
