The science

The Clever is a hybrid: it steeps like a French press and drains like a pour-over. A valve in the base stays sealed while the coffee steeps in full immersion — every particle in contact with all the water, extraction slowing naturally as concentration rises. Set it on a cup or server and the valve opens, and the finished brew filters through paper on its way down.

You get immersion's two best properties — evenness and forgiveness — plus paper's cleanliness, with no technique tax. There is no pour pattern to master because pouring is not the extraction; time and temperature are. Grind medium-coarse, use 90–96 °C water at around 1:16, steep three to four minutes, then drain.

Two details lift a Clever brew from good to excellent. First, stir or swirl right after adding water so no dry clumps float through the steep. Second, remember that the drawdown is still percolation: the last minute of draining extracts a little more, so if your cup runs bitter, shorten the steep first — the drain time stays roughly constant either way.
