The science
The Switch is a V60 with a stainless ball valve under it, which means it can be two brewers — and, more interestingly, both in one brew. Valve open, it percolates exactly like a V60: efficient, bright, technique-sensitive. Valve closed, it becomes a clean immersion brewer: even, forgiving, slower to extract as the water saturates.
The hybrid logic is where it earns its place. Acidity and aromatics extract early and fast; sweetness benefits from longer, gentler contact. The signature technique brews the first pours valve-open at high temperature to capture brightness percolation-style, then closes the valve and finishes with a cooler immersion steep that builds sweetness without dragging out harshness. You are sequencing extraction phases in a way no single-mode brewer can.
Grind medium as a starting point — slightly finer than a pure immersion brew, since part of the contact is percolation. If you brew full-immersion recipes, treat it like a Clever: the steep does the work and the open valve just ends it. If you brew valve-open, everything in the V60 playbook — bloom, gentle spirals, drawdown as diagnostic — applies unchanged.
