Heat is a rate lever. Remove it, and time steps in: what near-boiling water extracts in three minutes takes cold water twelve to twenty-four hours. But cold brewing is not just hot brewing in slow motion — it is selective. Many of the volatile aromatics and bright acids that define a hot cup barely make it into cold water at all, and the aggressive chemistry that hot water performs on the coffee simply never happens.
The result is its own drink: low-acid, heavy on chocolate, caramel, and malt, round and gentle — and less complex than the same bag brewed hot. A different drink, not a lesser one.
