If cold brew is a different coffee, flash brew is the same coffee — caught mid-sentence. You brew a normal hot pour-over, but a big share of the recipe water sits in the carafe as ice. Hot extraction pulls out everything a great filter coffee has — the fruit acids, the florals, the fragile aromatics cold water leaves behind — and the instant the coffee lands on the ice, it chills so fast those volatile compounds are locked in place instead of steaming away.
The result drinks nothing like cold brew: bright, juicy, tea-clear, with the acidity of the hot cup intact. If cold brew is chocolate and dusk, flash brew is citrus and morning.
