You’ll need

• 15 gcoffee
• 251 gwater at 95°C

How to brew

1. —Prep

   Fill the server with 100 g of ice

2. 0:10Pour→ 30g

   Pour to 30 g and swirl — small bloom

3. 0:20Wait

   Rest while the bloom settles

   With 40% less hot water, a complete bloom matters even more.

4. 0:45Pour→ 90g

   Pour slowly to 90 g

5. 1:15Pour→ 150g

   Pour to 150 g — that's all the hot water

6. 1:45Wait

   Draw down straight onto the ice

   Flash chilling traps the volatile aromatics that slow cooling lets escape.

7. 2:30Swirl

   Swirl the server until the ice stops shrinking

8. 2:40Serve

   Pour over fresh ice and serve
