The science
Percolation is fundamentally more efficient than immersion: fresh water constantly moves through the bed, so the concentration gradient between water and coffee stays steep and extraction stays fast. The same property makes the V60 less forgiving — water follows the path of least resistance, and any unevenness in the bed becomes a channel that over-extracts one region while abandoning another.
Grind does two jobs at once here. It sets surface area (finer = faster extraction) and it sets flow restriction (finer = slower drawdown = longer contact time). Those effects compound, which is why one grind step changes a V60 more than almost any other brewer. Use total drawdown time as your diagnostic: for one cup, most recipes should finish within about three minutes.
The bloom matters chemically, not ceremonially. Fresh coffee is full of trapped CO₂, and escaping gas physically pushes water away from the particle surface. Wetting the bed with two to three times its weight in water and waiting 30–45 seconds lets the gas clear so the main pours extract evenly. Every pour is also agitation: pouring higher and faster knocks more flavor loose but migrates fines downward and risks clogging. Pour gently in slow spirals, and save the swirl for settling the bed flat, not stirring it.
Run water hotter than you think — 93 °C to a full boil for light roasts. Hot water extracts sweetness and complexity faster than it extracts harshness from good coffee; underheated water just gets you a sour, hollow cup.
