Reading the drawdown

Every pour-over ends by writing you a report: the drawdown time and the shape of the spent bed. Learn to read both and troubleshooting stops being guesswork.
Too fast, with a sour, thin cup: the water short-cut its work. Grind too coarse, dose too small for the brewer, or channels let it through unearned. Too slow, with a bitter, muddy cup: the water overstayed. Grind too fine — or, just as often, fines you shook loose with rough pouring migrated down and blinded the paper. The clock and the tongue almost always agree; when they do, believe them together.
