Kalita / Flat-Bed — brewing guide

The Kalita's flat bed is an evenness machine. In a cone, the coffee at the point sits under the deepest water column and extracts hardest; a flat bed keeps depth — and therefore extraction — nearly uniform across the whole puck. Three small exit holes restrict flow, so the brewer itself meters the drawdown and partially decouples your pouring from the contact time.

That restriction makes the Kalita notably forgiving of pour technique. The classic approach is pulse pouring: several small, gentle additions that keep the water level low and steady rather than flooding the bed. A stable, shallow slurry maintains even extraction and keeps fines from being driven into the base of the filter.

The wave filter's ridges hold the paper away from the dripper walls, insulating the slurry and keeping flow moving through the bed rather than down the sides — so avoid rinsing so aggressively that the waves collapse. Grind medium, brew at 88–96 °C at around 1:15 to 1:16, and expect the flat bed to reward you with a rounder, more sweetness-forward cup than a cone at the same settings.
