How to brew

  1. —Prep

    Add 200 g of ice to the Chemex

  2. 0:10Pour→ 60g

    Pour to 60 g — bloom

  3. 0:20Wait

    Rest — short and sweet

  4. 0:45Pour→ 180g

    Spiral slowly to 180 g

  5. 1:30Pour→ 300g

    Pour to 300 g — all the hot water

  6. 2:15Wait

    Draw down over the melting ice

    Chilling in seconds keeps the volatile fruit notes a fridge would dull.

  7. 3:45Serve

    Swirl until the ice is nearly gone; serve
