How to brew

  1. Prep

Add 20 g to the phin; shake it level

  2. 0:15Prep

Rest the gravity press on top — don't twist tight

  3. 0:25Pour30g

    Bloom: pour to 30 g

  4. 0:35Wait

Wait — the grounds swell and seal the bed

The bloom swells the bed against the press, so the drip runs slow and even.

  5. 1:15Pour110g

Fill to 110 g; set the lid on

  6. 1:30Wait

Let it drip — four to five minutes

If it gushes, grind finer next time; if it stalls past six minutes, go coarser.

  7. 6:00Serve

Serve hot in a small cup
