The science

Immersion is the simplest extraction there is: all of the water meets all of the coffee at once, and time and temperature do the rest. Because no fresh water flows through the bed, the brew moves toward equilibrium — as the water grows more concentrated, extraction naturally slows. That self-limiting curve is why the French press is so forgiving: an extra minute changes the cup far less than it would in a pour-over.

Grind is a body dial here. The metal mesh stops nothing smaller than its weave, so fine particles end up in the cup as sediment and silky texture. Grind coarse and you trade some extraction for a cleaner mouthfeel; grind finer and you gain strength and heaviness along with silt. Whatever you choose, keep it consistent — a wide spread of particle sizes gives you the worst of both.

Temperature falls steadily through the long steep, which is why preheating the beaker matters more than chasing an exact number. Start at 92–96 °C and let it drift. For the cleanest press, resist the plunge: stir the crust at four minutes, skim the floating foam and grounds, wait several more, then press only to the surface of the liquid. Plunging to the bottom stirs the settled bed back into your cup.
