• 36 gwater at 93°C

How to brew

1. —Prep

   Fill a tall glass with ice; add 180 g cold milk

2. 0:10Prep

   Lock in an 18 g dose

3. 0:20Pour→ 36g

   Pull 36 g of espresso

4. 0:48Serve

   Pour the shot over the milk and serve
